Cooking in Community: Foodways Traditions from Appalachia and Beyond

With support from Mid Atlantic Arts, Augusta is presenting a series of foodways classes in Elkins, WV. The classes will be taught by experienced chefs and home cooks from a variety of cultures represented in Appalachia today. Classes will cover specific dishes such as arepas, adobo, tomato sauce, meatballs, pizzelles, pepperoni rolls, dumplings, fried chicken, and collard greens, as well as addressing topics such as cooking fresh in food deserts, using local seasonal ingredients and canning and pickling techniques. Students can expect to come away from each class with hands-on knowledge about how to make a dish and hopefully a deeper understanding of the importance of that dish to the people whose kitchens it sprang from.

On February 27th, 2023, from 6-8pm at the Phil Gainer Community Center, Augusta Heritage Center presents: Dumplings! Chinese Family-style Festive Cooking. Yuru Cheng of the Hutong in Elkins, WV will teach us how to make a vegetarian and meat filling for Chinese dumplings as well as how to fold and cook them. 

From Yuru: 

“Dumpling is our love language in northern China. It’s the go-to celebratory food for any festivities. New Year’s Eve? Dumplings! First day of winter? Dumplings! Before a trip? Dumplings! One reason is that the shape of dumplings reminds people of gold ingots. But more importantly, the making of dumplings is a warm and celebratory familial cooking activity that we associate with childhood and a sense of home. 

On 2/27, let’s make dumplings together from scratch! I am Yuru from The Hu Tong, an Elkins local food system enthusiast and a farm-to-table Chinese Chef. This will be not only a tour of authentic Chinese flavors, but also an immersive experience of this special family cooking experience.”
